Jose Carballo was promoted to Assistant Coach / Hitting Coach in 2019, where he works primarily with the infielders and catchers.
During his time with the Wildcats, Carballo helped to bring in the most accomplished recruiting classes in school history. The Wildcats' 2021 JUCO class was named the 48th-best in the courty by JBB, the highest ranking class in program history
In 2019, B-CU signees ranked 59th in the nation according to Perfect Game, the highest ever for Bethune-Cookman baseball at the time.
The former four-year standout for Bethune-Cookman, two-time Mid-Eastern Athletic Conference champions and 2016 Wildcats baseball varsity team captain, returned to Daytona Beach in the fall of 2018 as Graduate Assistant / Director of Baseball Operations. In the fall of 2019, Carballo was named Volunteer Assistant Coach until officially promoted prior to the 2019 season.
Carballo joined Bethune-Cookman baseball program in 2012 as a student-athlete, where he played for four seasons for head coach Jason Beverlin as a catcher and a first baseman.
After graduating from B-CU, Carballo briefly returned to where he was born and raised, Puerto Rico, to play for his hometown in the Puerto Rico Amateur League.
