Prior to going to Alabama A&M, McCoy served as the Cornerbacks Coach and Recruiting Coordinator for three-time Mid-Eastern Athletic Conference Champion North Carolina Central. Two of the mainstays in the lineup was sophomore Mike Jones Jr and junior Ryan Smith. Jones finished the season with 40 Tackles 13 PBU’s, and five interceptions en route to being named to several All-American teams and the All-MEAC first team. Ryan finished the season with 58 Tackles, 7 PBU’s and one fumble recovery. Their development continued over the next couple of seasons with Smith being drafted in the fourth round by the Tampa Bay Buccaneers and Jones going on to play in the CFL.

In 2009, McCoy was promoted to the Defensive Coordinator and switched the defense from a 4-3 to a 4-2-5 scheme. Under the new scheme, Kentucky State saw a much-improved defense moving from the bottom of the nation's statistics to the top half including a top 20 total defense averaging 282.73 yards per game; a top five pass defense averaging 121.09 yards per game;  and a top 20 red zone defense. By changing the scheme, he was able to move Tyrell Henderson to the three technique which allowed Henderson to utilize his speed and strength to garner all American Honors while Derrick Addai improved to a First Team All-Conference performer and an undrafted free agent of the Cleveland Browns.
After two years directing one of the top defenses in the nation, McCoy moved over to serve as the Wide Receiver Coach and Special Teams Coordinator for Kentucky State. In this new role he developed Raphael Amey into an First team all SIAC Wide Receiver and a Second team all SIAC Punt Returner and an undrafted free agent of the Montreal Alouettes. He also developed Keith Massey into a First team All SIAC Kick Returner and Cade Berryman into a second team All SIAC Kicker.
